The kids and I whipped these up with ease pretty quickly yesterday. While ours were a bit on the small side, they are packed with chocolate and marshmallow goodness so I wouldn't want them much bigger.

Chocolate Surprises
2 cups flour
1 cup cocoa powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 cup plus 2 tablespoons butter, softened
1 cup brown sugar, packed
1 large egg
1/2 cup whole milk (I used what we had on hand, skim milk)
2 teaspoons vanilla
10 strawberry or other flavored marshmallows, cut in half
(I used regular small marshmallows and left them whole)
Icing:
3 cups powdered sugar
1/3 cup cocoa powder
1/2 cup sour cream
(I halved this entire icing recipe and still had more than enough for my 3 dozen cookies)
Heat oven to 350 degrees. In a bowl, sift together the flour, cocoa, powder, salt, cinnamon, and baking powder. Set aside.
Using an electric mixer on medium speed, cream all the butter and brown sugar until fluffy, about 3 minutes. Add the egg and beat until mixed, about 1 minute.
Add the milk and vanilla, mixing on low speed.
Slowly add half of the flour mixture, mix, and then the remaining flour mixture. Mix well until blended.
Line a cookie sheet with parchment paper. Using a cookie scoop, make balls of the dough and put on to the sheet. Bake for 10 minutes.
Remove from oven and top each with your marshmallows.
Return to oven and bake another 4 minutes, then cool cookies on a rack.
Make the icing: sift the powdered sugar and cocoa in a bowl. Stir in the sour cream until it's smooth. Top the cookies with the icking so that the marshmallow is completely covered.
Allow the icing to set, about 1 hour.
