Healthy Banana Muffins



3/4 cup Quick Oats (or 1 c. old fashioned oats)-soak in 1 1/4 cups milk
1 large Egg, beaten
1 cup Brown Sugar
1/4 cup Oil
3 large Bananas, mashed (equaling 1 cup or more)
1 Tbs. Vanilla

Mix all above ingredients together and stir in the following:

2 cups Flour
1 tsp. Salt
1 tsp. Baking Soda
3 tsp. Baking Powder
1/2 cup Walnuts, chopped
1/2 cup mini-Chocolate Chips

Grease Muffin Tins. May sprinkle with cinnamon & sugar if desired.

Bake at 350 degrees for 20-25 minutes.

  2. Just checking up on your blog, lots going on!! I can almost smell those muffins baking :) Homemade muffins with fruit in them are one of my favorite things to bake for my kids!
