Chicken Club Pasta Salad
8 oz. corkscrew or spiral Pasta
3/4 cup Italian dressing
1/4 cup Mayo
2 cups chopped, cooked Chicken
1 cup Monterey Jack or Mozzarella Cheese, cubed or shredded
12 strips crisp-cooked Bacon, crumbled
1 cup chopped Celery
1 cup chopped Green Pepper
8 oz. Cherry Tomatoes, cut in half
1 Avocado, chopped (optional)
Cook and drain the pasta according to package directions and rinse with cold water. Whisk the dressing with the mayo in a large bowl, then stir in the pasta and the remaining ingredients. Spoon into serving bowl. Great for picnics too!
